The history of Mexican Cheese dates back to around 1493, when Christopher Columbus, back to the colonization of the America's by Spain. Coincidentally, Spain brought cattle with them.
The Mesoamericans had never heard of dairy products, so when the Spanish showed up with, cows, sheep, and, goats they didn't know what to think. So when the Spanish started to make cheese with these animals, the "New World" changed forever.
Cheddar Cheese
Back in 12th-century England, in the small village of Cheddar, there were multiple caves. These caves were perfect for making cheese. While the exact inventor is unknown, it was said to have been made when a milkmaid left milk in these caves and came back to find it hardened. Today, it is credited to Joseph Harding from the 19th century, as the "Father of Cheddar Cheese."
American Cheese
American Cheese was made in the 1910s, Switzerland by Walter Gerber, and Fritz Stettler. But later, James L. Kraft, got a patent and owned the cheese. The cheese is mixed until it becomes a melted mixture. then it is heated at around 150°. Once done, you get processed cheese. James started calling it "American," despite it's origins.
